We are looking for a dynamic and experienced Outlet Manager to lead two of our most distinctive venues: the elegant Chandelier Lounge and the uniquely local Our Land . This is an opportunity to drive culture, consistency, and guest loyalty in two outlets that showcase the heart of Kiwi hospitality.
About the Role

As Outlet Manager for Chandelier Lounge and Our Land, you will be the driving force behind two of our most iconic spaces: one a sophisticated lounge where guests celebrate life’s moments, the other a proudly local bar that tells the story of New Zealand through flavour, atmosphere, and spirit.
This role is about more than managing operations. It’s about building systems that guarantee consistency, shaping a culture where your team thrives, and inspiring moments of connection that turn first-time visitors into loyal regulars. You’ll mentor and coach your team, set the tone for excellence, and collaborate on creative menus, beverage lists, and promotions that keep both outlets vibrant and relevant.

As Outlet Manager, you will:
- Lead the daily operations of Chandelier Lounge and Our Land, ensuring consistent and exceptional guest experiences.
- Build systems and processes that guarantee service quality, upselling, and operational efficiency.
- Mentor, coach, and inspire a diverse Food & Beverage team to uphold Cordis standards and values.
- Collaborate with the Executive Chef and Beverage team on innovative menus, beverage lists, and promotions.
- Oversee supplier partnerships, stock control, rostering, and payroll with accuracy and accountability.
- Drive revenue growth while controlling operating expenses, wages, and cost of sales in line with budget.
- Ensure compliance with HACCP, liquor licensing, and all Health & Safety requirements.
- Contribute to the hotel’s sustainability initiatives by promoting responsible resource use and waste reduction.
This is not just a management role, it is about building culture, leading with purpose, and ensuring both outlets deliver consistent hospitality that keeps our guests returning.
About You
- To excel in this role, you will bring:
- At least 3 years’ experience in a leadership role within a large, high-volume restaurant or bar environment.
- Proven ability to lead, coach, and inspire a large, diverse team.
- Strong commercial acumen with experience in cost control, budgeting, and driving revenue.
- A passion for hospitality - with the ability to turn service into loyalty through memorable guest experiences.
- The resilience and energy to thrive in a busy, dynamic environment.
- Flexibility to work across rotating shifts, Monday to Sunday.
