A new mithai company, Fatehyuvi Ltd., in Dunedin, Otago, New Zealand, is looking for a Cook ( ANZSCO: 351411)
Only New Zealand citizens, or residents, or on an open work visa candidates, are eligible to apply if they have two years’ work experience in making ethnic mithai (Confectionery). Pay rate: $27-$30 per hour and overtime also at same pay rate 30-35 hours per week, and wages paid weekly in their nominated bank account. Working hours: 8 am- 3 pm as flexibly required with a weekend availability. Duties A cook working in confectionery in India is responsible for the preparation, cooking, and presentation of a wide range of Indian sweets and desserts, ensuring traditional authenticity and high standards of hygiene and quality. Key duties typically include: Preparing and cooking various Indian sweets (mithai) and confectionery items such as burfi, ladoo, jalebi, rasgulla, and more, often following traditional methods but also innovating with new recipes where appropriate. Selecting and sourcing high-quality ingredients, monitoring stock, and managing inventory for smooth kitchen operations. Ensuring food safety and kitchen hygiene by adhering to standardized guidelines, cleaning equipment, labeling and storing ingredients correctly, and maintaining sanitary conditions throughout the workspace. Applying finishing touches, such as glazes and icings, to ensure presentation excellence of all sweets produced. Coordinating with other kitchen staff, overseeing junior cooks or helpers, and collaborating to meet production goals, especially during festive or high-demand periods. Monitoring oven and cooking equipment, maintaining correct temperatures, and checking quality to ensure perfect texture and taste of confectionery products. Maintaining records of production, temperature logs, and inventory, and ensuring compliance with occupational health and safety regulations. Preserving the authenticity and quality of traditional confectionery recipes. Specialized confectionery cooks (Halwai) in India are expected to have deep knowledge of sweet-making techniques, strong understanding of food safety, and the physical stamina to handle kitchen tasks in a large-scale or high-volume operation. These duties may further expand to customer interaction, training new kitchen staff, and supporting the business with input for marketing or promotions, depending on the scale and setting of the confectionery operation.
