Key Responsibilities:
- Hands-on leadership across all kitchen operations, ensuring consistency, creativity, and excellence in every dish
- Oversee daily operations for all outlets. From high volume, interactive dining & banquets, through to more bespoke Chandelier Lounge, New Zealand concept bar food, IRD, Club Lounge and our Colleague dining.
- Ensure the successful execution of high-volume banquet events, delivering high quality and maximising profit with well-planned and costed recipes.
- Develop and evolve food concepts and menus in collaboration with key stakeholders, such as Director of Food and Beverage, outlet managers and marketing, aligned with guest expectations and brand standards
- Lead, mentor, and inspire a team of 70 chefs, fostering a positive, high-performance kitchen culture
- Manage food cost, labour budgets, inventory, and supplier relations with a strong focus on quality and efficiency, working with the purchasing team to achieve the best outcome.
- Champion food safety and hygiene standards, ensuring compliance across all areas of the kitchen to continue HACCP status.
Our ideal candidate has:
- Proven experience as an Executive Chef in a luxury hotel or large multi-outlet environment
- Strong background in high-volume banqueting and large-scale event catering
- Demonstrated ability to lead and motivate large culinary teams
- A creative and progressive approach to menu design, presentation, and guest experience
- Solid financial acumen with experience managing large kitchen budgets and food costs
- Culinary qualification at Level 5 or higher, with up-to-date food safety certification
